According to the U.S. Food & Drug Administration (FDA), there are an estimated three million people in the United States with celiac disease and other gluten intolerances. In people with gluten intolerances, foods that contain gluten trigger production of antibodies that attack and damage the lining of the small intestine, limiting the ability to absorb nutrients and putting them at risk for serious health problems.


In August 2013, the FDA issued a final rule defining “Gluten-Free” for food labeling. “Gluten-free” is a voluntary claim that manufacturers may elect to use in the labeling of their foods. However, manufacturers that label their foods “Gluten-Free” are accountable for using the claim in a truthful and not misleading manner, and for complying with all requirements established by the regulation and enforced by FDA.

In response to an increasing demand from clients to test and verify Gluten Free claims in both prepared and processed food, beverages and OTC / personal care items, Bureau Veritas Buffalo expanded its food testing capabilities to include Gluten Free testing.

Gluten is a name commonly given to a family of proteins found in wheat, rye, and barley.
Gluten is commonly found in breads, baked goods, soup, pasta, cereals, sauces, beer, and salad dressing.  It gives elasticity to dough, helping it rise and keeps its shape and often
gives the final product a chewy texture.

Gluten can be used as a stabilizing agent in more unexpected food products, such as ice cream and ketchup. Additionally, Gluten is also used in cosmetics, hair products, and other dermatological preparations.
